I find myself in a strange situation. One of my favorite shows on television is a show I gave up on halfway through the first season. Fringe.
I gave up on the show halfway through the first season because I felt the show was meandering, strange, and sometimes gross. It is still sometimes those things, but it is so much more too.
I gave up on Fringe, now in its third season, before the overall “meta narrative” became evident. Fair warning, spoilers ahead.

I like Fringe for all the reasons you eloquently describe. The characters are believably and sympathetically drawn as well, and the styling of the sets is wonderful. I'll never forget that scene when Olivia first crosses over to the other side and we see her looking out of an office window at the top of the Twin Towers.
It must cost a TON of money to make Fringe. It's like watching a big studio movie each week. And to have actual thinkers doing the writing puts it right over the top.
